The Zan&egrave; (Vicenza)-based company uses only premium ingredients: rare and prized Criollo cocoa &mdash; Filippi collaborates with producers in the Chachi Cayapas region of Ecuador, where a delicate and persistent white Criollo grows &mdash; opens with intense notes of cocoa, then transitions into hints of dried fruit and hints of red berries that pair well with the raspberries. The creation is completed with sourdough starter, eggs from cruelty-free farms, premium cold-pressed butter, and whole-pod Bourbon vanilla, organic and fair-trade.

Olivieri 1882, Arzignano (VI) The classic version remains the star of the line, but over time, Olivieri 1882, an award-winning pastry shop in Arzignano (VI), has evolved. Its live sourdough starter is the heart of a completely artisanal panettone, which involves a four-day natural leavening process and is made from two batches of dough separated by two resting periods before baking, guaranteeing lightness. The very rich recipe (with four times the amount of egg yolks required by Italian panettone regulations) uses only the finest ingredients.

Chocolate and pears, Maresi, Brescia A symbol of excellence and tradition, Pasticceria Maresi's artisanal panettone takes shape slowly thanks to sourdough starter and a respect for natural leavening times. The flavor is a perfect balance of aromas and sensations: vanilla pods intertwine with orange zest, releasing a citrus note that blends with the sweetness of the raw almond and granulated sugar glaze. Varieties include the classic, dark chocolate, chocolate and pear, and white chocolate and raspberry.
